Cardamom Cashew Latte…oh my, you won’t believe it until you taste it!!
Coffee lovers rejoice. This recipe is a game changer!! If you have 5 minutes and just five ingredients, this coffee just may change your life. I can’t believe something so simple can be so good. This drink can reach your lips quicker than getting through the line at a Starbucks drive thru. And, guess what? It’s made in a blender…no fancy shmancy espresso, latte, cappuccino maker necessary.
So let’s get on with it! From frappucinos to cold brew, bottled coffee drinks are hot and are popping up everywhere! But, have you looked at the price tag on those babies? Pretty steep. I have seen them as high as almost $5.00..yikes!! I know, I know those mean coffee companies prey on us coffee addicts, knowing that we will do just about anything to fuel our fix. Peeps I have your back with this one.
And guess what? It’s dairy free too. Yup! The return of the cashews. To be honest, cashews are really a miracle food. I mean they are salty and crunchy, full of protein and they can make just about anything creamy. Have you tried any of these recipes on the blog that use cashews for their creaminess?

A great thing about this recipe…no soaking required for the cashews like the recipes above. Just toss them in the blender with your other ingredients and voila, pure creamy coffee goodness.
The cardamom in this recipe is optional. If your not a fan, cinnamon would be yummy too. I love using the dates as our sweeter. They are natural, have no preservatives and are chock full of vitamins, minerals and fiber too! This drink can be enjoyed both warm or hot..you get to choose. Either way its delicious!!

Description
This delicious, creamy, cardamom cashew latte comes together in minutes with just a handful of ingredients.
Ingredients
- 12 oz. Strong coffee
- 3 Medjool dates (pitted)
- 3 T. Cashews (Roasted & Salted)
- ¼ t. Vanilla Extract
- 1/8 t. of Cardamom
- 1 t. Cacao Nibs (optional but yummy)
Instructions
- Add all ingredients to a high-speed blender.
- Blend until smooth and creamy.
Notes
- Enjoy this drink hot or cold.
- If your making a cold latte, soak your cashews over night to make sure they blend well.

Carla, this sounds sooooo good. Sorry I haven’t been around at the classes much. I miss them! Still trying to figure out what I can eat. (Check out what a low oxalate diet is and you’ll understand!!). Maybe someday there will be a class on how to eat low oxalate?!?
