Moroccan quinoa salad paired with a creamy curry dressing. Simple, healthy and delicious!
Ingredients
Salad Ingredients
- 1 c. Quinoa (3 C . Cooked)
- 1 Can Garbanzo Beans
- 2 Scallions (sliced)
- ½ C. Shredded Carrot
- ½ C. Golden Raisins
- 3 T. Chopped Cilantro
- ½ C. Toasted Pecans (chopped)
- ¼ t. Salt
- Arugula (optional)
Dressing Ingredients
- ½ C. Just Mayo
- 1 t. Curry
- 4 t. Apricot Preserves
- ½ Lemon (juiced)
- ¼ t. Salt
- 2 t. Apple Cider Vinegar
Instructions
Salad Instructions:
- Rinse quinoa in water and strain.
- Bring quinoa and 2 c. of water to a boil.
- Reduce heat, place lid on and cook for about 15-20 minutes or until liquid has been absorbed.
- Set aside until cool.
- Once cool, toss all ingredients together with desired amount of dressing.
- Top with fresh cracked pepper to taste.
Dressing Instructions:
- Add all dressing ingredients to a high speed blender and blend until well combined.
