With summer in full swing, nothing beats the heat like a cold libation. This Pineapple Ginger Faux-Jito delivers, hands down! The title of this drink may be throwing you off a bit with the word faux. Let’s clarify, this drink is a mocktail, a.k.a a cocktail without the alcohol. Now, now, for those of you that may like your drinks a bit boozy, you can always add rum to the recipe for the full blown mojito real deal.

Having grown up in Florida, and having some Cuban in my blood, I have had my fair share of mojitos. I just love the twist on this drink with the addition of the pineapple and ginger. For this Pineapple Ginger Faux-Jito, I am using ginger essential oil. Yes! you can use essential oils in your drinks! One caveat, please make sure to do your research on the essential oils you choose to ingest. Not all of them are created equally and some can be toxic if not used properly.

Pineapple Ginger Faux-Jito

Description
Kick up your summer with this refreshing twist on a classic mojito, sans alcohol. Pineapple, ginger, and fresh mint come together with sparkling water for a delicious summer drink.
Ingredients
1 ½ C. Pineapple (frozen)
2 C. Sparkling Water
1 Drop Veriditas Ginger Essential Oil (or 1 tsp. of fresh minced ginger) I used Pranarom Essential Oil
2 T. Liquid Sugar (or Agave)
3–4 Leaves of Fresh Mint (chopped)
Instructions
- Place pineapple, liquid sugar, sparkling water and mint in high speed blender. Blend until frothy and well blended.
- Add essential oil (or minced ginger) and mix for 5-6 seconds. Add to a glass of ice and garnish with a wedge of fresh pineapple and sprig of mint
Notes
For the boozy version of this drink, add 2 jiggers (2 oz.) of your choice of rum

Could you use organic liquid Stevia and how much.

I don’t use Stevia, I have really tried to like it, but just can’t get past the after taste. I would imagine that you could use liquid stevia in this recipe. Given that I do not use it, I am not really sure how to advise on the number of drops. Please let me know if you make the recipe and how it turns out. I would love to share with the readers.
